Breakfast
Breakfast is considered by many the most important meal of the day and a lot of people skip it so getting your children involved in making breakfast should get them into a routine of eating it. Here is a few examples of some easy and fun breakfast recipes;
Breakfast animals
What you will need;
Slices of wholemeal bread
2 eggs
2 tablespoons of natural yoghurt
1 teaspoon of honey
teaspoon of cinnamon
25g butter
Animal shapes
What to do;
Firstly get your animals shapes and stamp them into your bread to make bread shaped animals.
Then break an egg into a bowl and then into a mixing jug (this helps to get the art of cracking eggs), repeat for your second egg, them whisk them.
You can then add your yoghurt to the jug and whisk along with the eggs, after a minute add the honey and cinnamon.
When the mixture has been whisked dip your animal shaped bread into the mixture, quick in and out.
They are then ready to be cooked, get a frying pan and add the knob of butter in it.
When the butter reaches foaming, add the eggy bread cook for 1-2 minutes then flip, and repeat cooking for 1 -2 minutes until they are golden.
They are then ready to eat you could even add a few bits of dried fruit to them to make eyes!
Lunch
Egg and Tomato toasts
What you will need;
4 large tomatoes
4 eggs
Black pepper
15g butter
1 tablespoon olive oil
4 pieces of toast
Instructions;
Put all 4 tomatoes in a bowl and then pour boiling water over them until they are covered leave for 2 minutes.
Then get a slotted spoon and peel off the skin, then cut the tomato into 4 and remove the seeds and core. Then chop them into smaller pieces.
Crack the eggs into a bowl and whisk, and then add the chopped tomatoes and some black pepper.
Then get a frying pan and melt the olive oil and butter, when melted pour the egg and tomato mix into the pan and stir. Cook for 2-3 minutes until the eggs are scrambled.
Put them onto toast and they are ready to eat you could also add mushrooms or peppers into the mix too!
Desserts
Having a balanced diet includes having a treat every now and then too; you can make them healthy with fruit but also with some chocolate in there too. It's great to get kids involved with making puddings as they are the most fun to make, but it will show get them into mixing healthy foods as well as just seeing chocolate and sweets as treats.
Pear and Apricot Compote
What you will need;
3 medium pears
1 tablespoon of chopped apricots
teaspoon cinnamon
50ml of water
How to make them;
Peel the pears and remove the stalk from them, then cut them in half, lengthways and then into smaller chunks.
Then get a saucepan and put the pear, cinnamon and apricots in together, cover the pan and heat for about 10 minutes, until the pears have become a thick puree keep an eye on the mixture and stir gently.
When you get the puree let it cool for a minute or so, then mash the mixture together until lump free, leave the mix to cool.
You can use the mix to either spread on a pudding like a sponge or even as a yoghurt pudding. You can also spread it on toast or crunchy oatcakes and have it as a little snack.
Blueberry Muffins
Ingredients;
300g self-rising flour
75g caster sugar
175ml milk
125ml vegetable oil
150g small blueberries
1 egg
1 tablespoon of poppy seeds
Instructions;
First thing is to set your oven going at 190oC, get you muffin tray and put the cases into the little sections.
Sieve your flour in a large mixing bowl then add the caster sugar and poppy seeds crack your egg into a small bowl.
Pour your milk and oil into a jug and whisk together then add the egg and whisk again.
Add the blueberries to the flour, sugar and poppy seed mix, then add the liquid mix to the bowl as well and mix together.
Get a desert spoon and fill the muffin cases with enough mixture, then put the tray into the oven for around 25 minutes until they are golden.
A little tip take the muffins out of the tray in their cases to cool on a cooling rack, if you leave them in the tray they tend to go soggy. You can use the same instructions when making muffins with different berries i.e. blackberries or even blackcurrant's, you might need to add a bit more sugar for blackberries though!
